Bad Wood?

The last few times I've used my smoker, I've had an awful lot of trouble with the smoke being too much and nasty, using either chips or chunks. I noticed today that the "bad" smoke has been from the same brand of store-bought wood.  What could be the problem? Is it too dry? Or just a bad brand?  I've been trying to hook up with a local orchard for some apple and maple, but haven't gotten any yet. Is there something I'm missing about storage, humidity, etc.?
 
It sounds like you might be getting creasote build up, and once you have creasote in your smoker you have to completely scrub it out and re-season it, otherwise the nasty taste wont go away. Unfortunately I have never used the GOSM smokers, so I can't give you specific suggestions on to much or to little wood and or oxygen.
 
Try cutting back on the ammount of wood you are using .

 And if your smoker is creasoted up it will need to be cleaned.
 
Thanks, I'll check it out. I did pull the chunks out, and they were pretty stinky as they smoked on the ground. I won't be using that wood any more.
 
tell me more about your smoke...... are you getting a buncha smoke offa the wood ans say maybe white and billowy??? i know was a problem for me when i first got started and had the off taste as well. once i got turned around to the thin blue smoke, kinda whispy, sometimes nearly unseeable is when things really started to go good for me. i had always thought your smoking so there had better be buncha smoke rolling outta the smoker but turns out its just the opposite...

I also own a GOSM big block, and Erain's reply is a very good one. You might find that as time goes by, you'll end of using less wood than when you first started. It's all good my friend.
