Honestly, just Low and Slow. I dont do aluminum foil after a certain amount of hours. I just tried to keep it around 210, sprayed an apple juice mixture on it every hour for about 5 hours and then in the last half hour I smothered on my own BBQ sauce. They were so moist and tender. Had just the right little tug on them. Thanks for the comment.
 
one small thing i noticed that shouldnt make too big of a difference is the placement of your smoking chamber therm.  i have the same smoker and digi. therm. and i notice that the sides of the grate close to where the gap is between the lid and the body is a good bit hotter than the middle of the grate.  i always try to position my chamber therm right in the middle when i can and get the meat on around it.

those ribs look great though.  baby backs have not been on sale all month and they want too much for them when they arent at my local stores.
