Gonna put it here, mods can move.

 I love my UDS but not practical for a quick meal after work so I bought a chargriller side box to fit that bill. I've been modding it and think I got it figured out. I've done a few smokes on it while modding it, some chicken thighs, turkey thighs, a couple chuckies and finally a fatty. I sealed off the factory exhaust and drilled 3, 3/4" vent holes on top and added a therm. I bought two pans, 1 for a drip pan and 1 for foiling. About a half chimney of coals works out great. I also made a cabinet for it to sit on with storage for my smoking pans and such. I put the coals off to the side next to the drip pan. A little water in it gets it going nice and slow like it should be. The only other thing I want to do is seal off the door, so off on a hunt for a gasket material that wont kill me. Enjoy.
