Brisket Bones!!! As much as we love pork ribs, pulled pork, and, oh, don't forget beef brisket...I think I can pull-off something unique for a few different meals here.

I guess I've been hinting about wanting something different to smoke...here it is! Oh, a beef packer brisket is covered up in the back of the heap, so, yea, I'll be a happy smoker for another few weeks

I'm thinking pulled pork from these bad boys...hmmm...smoke 'em up like a full packer beef brisket. Instead of separating the point/flat with beef, just debone and start pulling. If I hadn't just done some smoked green chili, I'd dice some up for another batch of chili...well, I still could do that too. Then, there's always smoked pork fajitas, or.......well, I have 4 days of work to think it over, then a day trip out of town on Friday......

Next Saturday is d-day....18lbs of bones to burn...
