Am making some cochinita pibil in my smoker right now. the smell coming out of there is amazing i'll be sure to post some q-view when am done.

I tried making Puerco Pibil awhile back, using a traditional recipe and wrapped in banana leaves.  I must have messed up the recipe, because it came out terrible.  I think I used too much ground annatto seed or too much lime juice.  Tasted a little too earthy.  It must have been my recipe, because everyone else on this site seems to love it.
 
this was a quick recipe i just the prepacked spices and blended it with orange and lime juice and like 3 habanero peppers. i just woke in the morning with a craving!! lol

have you tried achiote paste........i use this:

Very nice smoke - I love that stuff but have not made it yet - congrats yours looks great
