Smoked Bierocks...

I made a batch of bierocks this weekend and wanted to compare bierocks smoked in the Memphis Pro and bierocks smoked in the drum. ( I was bored. :) )

made my dough





made my burger, onion, garlic, cabbage filling...





brushed the tops with butter..



Put half in the Pro at 325F with hickory...



Put half in the drum at 325F with hickory...



Pro bierocks...





Drum bierocks...





The drum bierocks had a crispier bottom... the Pro bierocks showed more brown on top due to the convection feature.


Both tasted great with a cold beer.

Thanks E! Good to see ya. :)  I like to season mine with extra black pepper. also use salt and garlic.

here's the dough recipe.

1 1/4 cups of warm water
1 pkg of yeast
2 TBs oil
2 tsp sugar
1 tsp salt
3 1/2 cups of flour (more if needed)
I disolve the yeast in water, add the sugar, oil and then the salt.. stir in 2 cups of flour and add enough of the remaining flour to make the dough come together. Knead 5 minutes, cover and rest for 1 hour.
then divide and roll out.
I usually get 9 bierocks out of this recipe but I rolled this thin to get a dozen. I use about 3 lbs of meat and 1 to 2 cups of cabbage. I like my bierocks to be a bit meatier than cabbagier.

Oh Cowgirl, you just made a grown man miss his momma so much!  :*(  I haven't had these in soooo long...they were always a family favorite.  We called them runzas and my brothers and I would fight to the death for the last one! LMAO  I didn't realize they were also known as Bierocks.  Thanks for sharing the recipe!  Now that I'm into smoking and cooking there are so many other recipes I wish I'd have thought to ask for.  I'll be cooking these up this weekend!  Thanks

Never knew them as anything but cabbage burgers.  Some interesting names for them  Our church makes huge batches of them every year for sale.  One of the largest fund raisers of the year.  

Yours look really good cowgirl.  I may have to try some smoked. 
 
never heard of them them,put they look great, and they smell good to. i might try them on the rib-o-lator and see how they turn out.

lol Dang it Bob, I found another barrel this weekend  to use as a donor barrel to mount my ribolator on.... and it didn't fit my drum!! It was at least 2" smaller in diameter..... I'm getting desperate!!  I'm think I'm going to have to buy a kettle and use it as a donor.

Wow, those do look good. I've never heard of Beirocks before but they do remind me a little of Michigan UP(upper peninsula) pasties.

 I guess bierocks are the german version.

Thanks about the pup too.. she has been a lot of fun. The chickens are bigger than her right now but I hope she will be a big help to me in the future.

Jeanie,  We call them Runza's in Nebraska also.  There is actually a fast food chain called "Runza".  They serve runza's (obviously) and burgers, etc.  Occasionally they have a BBQ Runza.  Don't remember if it is filled with pulled pork or beef, it has been a few years since I had one but they are delicious.  I have thought about making them with pulled pork and BBQ sauce.

Always wondered what a Runza was.  I have seen the signs when driving through Nebraska.
