This Week's Project:::: Now Bacon!

I am envious. I used to help make head cheese when I was about 8 years old. I would go after the skull with a nut pick to get every bit of goodness after the head was boiled and most of the meat removed. I won't be having a hogs head any time soon but ...where did you get the recipe. I do Love home made head cheese but the commercial stuff is pretty tasteless..
