Need some more suggestions for Appetizers I can make

I am heading to my family reunion this week and my brother and I are going to be smoking a bunch of meat. We are already doing Butts, Ribs, ABT's, MOINKS and Stuffed Burgers but I am looking for any suggestions for another appetizer or two that would go good with Moinks for Thursdy night. This will be my first time making MOINKS. I wanted to try something new. I am basically going to make a meatball mix of meat, egg, crackers and spices then form a ball and put a piece of cheese in the middle then wrap in bacon and probably put some rub on the top or something. I don't know if I should finish with some BBQ sauce or not? Any suggestions would be appreciated as I want to try something new.
 
only had moink 2 times no sauce on them.Serve sauce on the side for dipping.since moinks are finger food lets stick w/ that.Here is an appitizer we are asked to bring alot.Everyone calls them crack wraps .They are that addictive.totilla rollups 3 blocks cream cheese.1/2 lb cheap sliced ham.3 stalks green onions.1/2 cup pecans.1 tbsp cayanne pepper.1pkg. lg. flour tortillias.Directions:Let cream cheese soften, Place cream cheese in food processor and mix 1 block at a time.add ham onions and pecans after 2nd block of cheese. add 3rd block cheese and mix till you have a soft spredable mix.spread mix on a tortillia 1/8" to 1/4 " thick.Roll up tortilla .after you roll scrape excess from the edge and use to stuff the ends.Wrap each roll in wax paper and refridgerate over night. when you get ready to serve unwrap and slice in 1/2" slices. serve w/ toothpicks. use your favorite salsa to dip the slices in.
 
I saw some hot dogs wrapped in bacon then smoked and sliced into pieces that looked pretty good I think it would go real good using some sausage links too.
 
Rbranster,do some fruit-Apples,Peaches,Pineapple(whole-canned doesn't do right),any fruit does well.Cut to fit grill or smoker and dip into Brown Sugar and cook till soft.A heavier smoke does good here as it is not there that long.I like garden Veggies smoked too,especially Squashes with Butter and Br,Sugar.

As far as the meatballs go, smoke, then dip in 50/50 water and BBQ sauce/grape jelly (maybe some red pepper mixed in) and smoke for another 20 minutes or so.

Or with some chips our favorite:

Cowboy Caviar

¼ cup EVOO

¼ cup red wine vinegar

2 garlic cloves pressed or finely chopped (when in a hurry garlic powder)

½ tsp pepper

1 tsp cumin (tastes best when you toast the seeds then grind, but not necessary)

1 can black eyed peas (I get one with spices and add it without draining it)

1 small bag frozen corn

¾ cup cilantro (I go about ½ because I am still not the biggest Cilantro fan)

¾ cup green onions

3 Jalapeños seeded and finely chopped (4 if you like it a little hotter)

3-4 avocados chopped

3 roma tomatoes chopped (I scoop the juice and seeds out of the center)

Mix it all together.

The last 5 Weddings I've been to had them. When my son got married, he actually told all of the appetizer serving girls to go to the big gray-haired guy in the Tux' first!

Boy did I raise that kid right!

My favorite appetizer to go with ABT's is hot dogs, wrapped in bacon, rolled in brown sugar.

My tips, get the thinnest cheapest bacon you can, slice the hot dogs in thirds, wrap in bacon and insert toothpick, roll in brown sugar.  Bout 2 hours at 225 normally gets em done, there is a perfect time in there where that sugar crisps the bacon just right, thats when they come off.  Alternatively if you are having a shortage of space in a smoker.....wrap the hot dogs the same and fill a crock pot with them, and cover them all with brown suger, which will liquefy and it will cook in the brown sugar.  Not as good as smoked, but still darn good.

My friends have dubbed these "Candied Dogs"  I'm not a big fan of the name, but I can't come up with anything better.

Looks like the only thing not mentioned was home made sausage or seafood boudin.  Not sure how available fresh seafood is in your part of the country but you can get everything you need at Wallmart.

You want to add flavor at every step so when you precook the seafood either saute with margarine, garlic, redpepper, salt, onion etc or lightly boil with a good shrimp boil.

You want to stay with firmer seafoods.  Keep away from oysters and mussels but scallops and squid should work pretty well.

Coarse grind together

Seasoned cooked shrimp

Seasoned cooked crawfish

sauteed onions, green onions, bellpepper, garlic

seasoned cooked fish  (more of an extender so go easy with the fish)

any other seafood you enjoy

cooked boiled (steamed) rice

stuff into casings, let meld in fridge overnight, smoke

Slice, serve with mustard, white remoulade, horsey sauce or tarter sauce.

As mentioned earlier the rice just eats up the seasoning so make sure you season well or you will end up with a very bland dish.

Now you are getting some good appetizers to create from alot of the good folks. Well here's my 2 pennies How about the chicken lollipops that Jacquie Pippin created in the video on de-boning a chicken. Using the wing parts and pulling the meat down to the bottom and then smoke then. I have done them a couple of times as apps for a catering gigs and they were very well received by the guest.
 
RB, how about some pulled pork inside of soft shelled burritos with a dippin' sauce and some (they can add their own ingredients), cut up the burritos into small finger foods and then give them a shot of tequila or whiskey, I do believe they will be back for 2nd's or even 3rd's.

This works well with chicken tenders too.

Give buffalo chicken cheese balls - you can make them ahead of time, freeze them, then smoke when you need them - so that's a plus in my book.
 
Those hotdogs wrapped in bacon that tlzimmerman makes sounded so good that I went to the store to get some bacon, I have some in the smoker now, I also did a couple of red hots (or Georgia Hots as some call them). Of course while I was at the store there was a 7-1/2 lb pork butt for $1.49 lb. that called out to me,  Unfortunately I am going away for a couple of days so I had to freeze it since today was the last sale date for the piece of meat, that's why it was the price it was, 'managers special' . Even the regular sale price wasn't bad, $1.69 lb.

Thanks for the recipe, they are very tasty, we gobbled them up.  The fatter ones in the pic are red hots. Quick and easy, I will be doing them for my next party

I did some armadillo eggs the other day after a post I saw on the great SMF... took a halved, seeded jap and overfilled it with cream cheese (that has some seasoning mixed in) and wrapped the whole thing in a layer of JD hot breakfast sausage... oh man those things were great!
