Can I just follow the instructions and trim?

Sure, but you better have a sharp knife, especially if you did a 3-2-1.

It will have a tendency to tear when already cooked, unlike when raw.

Especially if you did 3-2-1 the "Fall off the bone" Style.

Yeah... if you have aleady cooked them and they are tender I would just leave them as is, unless you don't mind about the trimmed section looking a little ragged. The other option is if you are going to serve them the next day, it to cut them when they are cold, the meat will firm up a bit and cut cleaner.
