I have wanted to try smoking meat for a while and have finally taken the plunge haha. However after looking around youtube and various sites i have not yet invested in a smoker, i do have a kettle BBQ and have seen it done in these kind of BBQ's.
I thought id ask for some advice as im giving it a go this weekend. So im going to be smoking a pork shoulder, i have the following equipment:
Kettle BBQ with just the standard vents on the top and bottom, hickory wood, apple wood, thermometer to monitor the temperature and another for the meat, tray to place under the meat (which will be half filled with water)
So my main questions are:
1. Will a kettle BBQ be good enough to try it out as first, any tips or anything i should be aware using it?
2. Do i use normal briquettes and if so, is there a rough estimate to how much will be used so i can make sure i have enough.
3. Should you mix differnet types of wood together or is it just a preffernce to taste? and also how much wood should you roughly be looking at using?
I will be buying a smoker in the future, i just wanted to give it a go in what i had first before i do.
Any tips/help will be appreciated. Im hear to learn so any advice to equipment i should buy as well would be good.
