A Couple of Dudestramis Plus A Lot of Other Stuff

Had about 25 people at my house yesterday for little BBQ party.  I have a friend who's recently picked up the smoking bug and I've been helping him out via phone while he's been trying his hand at smoking.  So it seemed like I was due for a smoke myself and could introduce him and others to some new things beyond ribs and pulled pork.  Don't get me wrong.  I love ribs and PP.  Just wanted to give these folks a little something different.  So I did two 5lb Corned Beef Briskets, one 5lb bonless pork butt, four split chicken breasts, one breakfast fattie, one pizza fattie, and two cans of SPAM.  All this to be done on my 18.5" WSM.  Gonna be a full house!

I'll create the other threads in their appropriate areas.  Here's my pile o' meat...

No pics but I soaked the briskets in water in the fridge for 6 hours to leech some of the salt out of them.  Then the night before I gave it a rub down of EVOO, Pickling Spice and Old Bay Seasoning.

Tried a new lump charcoal.  It sucked!  Billowed white smoke forever.  Anyhow, I got through that.  I did the Minion Method.  You can see in this picture the charcoal looked like cut up lumber.  It's too uniform to be raw wood.  I'll never buy this stuff again.

Here's the CBB's after a couple of hours.  The pork is on the bottom leaving the rest of the top open for the fatties to go on later for some appetizers.  I filled my water pan with water, coke, and beer

Thanks all.  Good to be back.  My friend who just started smoking just texted me to say he was eating some of the pastrami I sent home with him and said it was awesome.  So I guess we've got another Dudestrami fan.

 
Where's the SPAM. I didnt see that anywhere on the table shot. Always looking for new ideas on somking SPAM. What did you do to it?

Looks great Dude!  Kind of in a rib and pulled pork rut (if you can call it a rut), always looking for ideas!  Looks like the meat had good company in the fridge.

The smoked gouda is the kicker for sure.  So much better than a lot of other cheeses I've tried.  And mellow for those not so adventerous to try something new.

Thanks Lucky.  BBQ'd meats are one of those things that many only use as a main course.  Sometimes it's as good or better when used as an ingredient in a bigger dish.  Check out my Pulled Pork Pizza with Baked Beans I had for dinner tonight.  Damn tasty.

I definitely agree with your comment in the reply to Lucky13 about using Bbq meats in a dish of some kind...it really steps things up to a whole new level of great eating, and the list of possibilities is endless.

I just had to check this thread out, with the mention of 'strami. I did one from scratch again for our family reunion a few weeks back, just for a special treat...man, was that a huge hit.

OK, now I gotta get my hands on another packer...you can never have too much pastrami in the freezer!

Keep that WSM happy, Dude...'cause it really likes your offerings!

I gotta say you got me hooked on dudestramis.  I still got a six pack in the deep freeze to hold me over till green beer day 2011.
