 I have not done these in a while, and thought it was time. I used a light "dusting" of rub and then smoked over apple at 250F. I did not foil them. I spritzed with apple juice hourly. At 3 1/2 hours they reached 165F internal. I brushed on some Sweet Baby Rays and let them stay in the smoker for 25 more minutes. They were a hit!!

Wow!  At least some of those look like the real old fashioned CSR's that were actually cut from the rib end of the loin rather than from the shoulder.

Great looking smoke!  Stick with that butcher!
