And yet a different meatloaf!!!

Well we bought the gosm BB and finally received all the parts to make it work. Took 3 weeks but now it is here and I wanted to do a meatloaf so....

The wife made it with all the parts I know some of them.

We do not measure so every time we do something it comes out a little better or ???

We put 3# of 90/10 1# of Italian sausage hot spice,

About a 1/2 cup of onions, 1/3 cup of green bell pepper both diced well.

tomato sauce but forgot to add it to the meat and other stuff, I was getting the smoker going so i missed some of the parts.

put 2 strips of bacon on top and used tomato sauce over the top...

After 4.5hrs it was 165 and ready to come in and join us at the dinner table...

Was real good but a little spicy so next time we will not use the Italian sausage hot spice but just regular sausage... May add more onion and green pepper for more taste.

1. That meatloaf looks awesome.  I need to remember to try sausage instead of straight ground beef and pork.

2.  You are good man for not having those Quail join the meatloaf in the smoker.

3.  You keep the cleanest smoker I have ever seen!  Props on a great smoke.
 
Congrats on getting the smoker going I know it took awhile to get all the stuff for it. The meatloaf looks good nice job

Yes the Quail and babies run through the back yard in search of food... the wife watches them and feed them now and then...

How did the bacon work out for ya. would you do it again with more than 2 slices or would that take away from the surface area to take in the smoke?

What wood did you use?

Yes the bacon was good on top, next time I may nuke it for a few minutes first to get it cooking as it did not get crisp. Could use 3 also.

I had some pkg of pelts and use apple and also used the hickory chunks i had. Had smoke all the way through the smoke.

4.5 hrs at about 230-250 Had a little wind that keep it changing but stayed in the range i wanted.

It was great... smoke was ok little short but i think that was because of the tomato sauce on the out side. A little over spicy for us, but will have many lunches next week.!!
