A big hello to everyone at SMF. Recently purchased at Brinkman vertical propane unit. I run a small restaurant up here in Seattle and thought we could have some fun with this unit, do some specials etc. I've got 20+ years of kitchen exp so I know my way around the kitchen. Found SMF pretty quick as I was looking for some info about butts. Man I love the internet, just a ton of great stuff on here. For instance I never knew about foiling the butts, great idea makes perfect sense and tried it on my first run. Wow just amazing results. Ran pulled pork sandwich for a special last week and we got rave reviews. It will be a regular menu item soon. All I can say is I'm gonna be smoking a bunch of stuff now. In fact I just ordered a GOSM Big Block yesterday, looks like Bass Pro has 'em on backorder so in the meantime me & the Brinkman will be working out some more recipies. love the forum and plan to make great use of it. I'll try to post some Qview pics of my next batch. Thanks again for all the knowledge
