7.9# bone-in boston butt rubbed with the rest of the billbo's famous i had left. Rubbed it in the afternoon and stored in the fridge till putting it on the wsm at 2:30 am. I got to sleep at 3:30 woke up at 5:00 and 7:00 to fiddle with the vents before getting up for the day at 9:00.
Thing froze at 160F for EVER before breaking the plateau only to get stuck at 170F! Storm was rolling in so after over 11 hrs on the wsm I wrapped it in foil and put it in the oven (still only at 177F). After a few more hours it finally got to 192F and I gave in and took it out (was gonna go 195-200) at 4:45pm!! 14 hours! Thank goodness I didnt try to get up early instead of doing it before sleep.
All I can say is AMAZING. When I went to pull it I couldnt even get it out of the foil in less than 4 peices, fell apart and was juicy and tender. I used SoFlaQuer's finishing sauce and made a carolina mustard/vinegar sauce along with my standard BBQ sauce for "dipping".
Im sooooo glad I found this hobby!
