I finally found a fridge to do my first smoker build and I am very excited! My roommate is helping me out with this and we are at the point where we have gutted the fridge and ripped out the insulation. I have purchased the smoker stack and piping, aluminum sheeting to replace the plastic on the door and to cover up the gap where the insulation was as well as to seal the bottom of the fridge where the heating element and charcoal will go. We are going to make this an electric and charcoal smoker.
I see that some of you have left the old insulation in and some have ripped out out and placed new insulation in its place. I am wondering what the importance is of having inulation in it. Do I need to put new insulation in it? If so what kind do you guys recommend?
Also where can I get a thermoeter for the smoker? I went to Menard's and Home Depot but the end of it was not long enough to reach the inside of the smoker. I am also wondering where I can get the heat element too? Maybe a good place to order these online?
