I know I haven't posted in quite some time, but Life has been crazy, I opened a second restaurant and started a catering business...Uggghh I am an idiot...lol I have no life, I sleep and breath BBQ 24/7.  anyway, I thought I would show off my new toy.

Tykie,  you said that you have 2 bbq restaurants. How's business? How far is the restaurant from Chicago? All that you use are outdoor smokers?

Your gonna like it I they are great smokers after a smoke or two its kind of like automatic to know how it likes to be run. Congrats

I had 2, I closed the first one in Ashland, due to my Landlord refusing to to fix anything, but I opened the 2nd on and business here is better then ever, and I started catering, I have done 3 weddings and last weekend I did a reunion for 200 people so I am kinda running a little ragged.  I am about 3 1/2 south of Chicago right off I-55, and no I also have an Indoor smoker I use at the restaurant

Congrats on the new addition. Glad to hear business is going good. Maybe one of these days if business holds up you can hire an assistant to relieve you a little bit. Smoking is a great thing, careful you don't burn yourself out.
 
What kind of indoor smoker do you use in the restaurant?  How many ribs/briskets can you do at one time, or better-asked, how many do you need to do at one time for business?

I have a "WOK Smoker"(the kind used in Chinese restaurants) that I converted to fit my use.  I go through about 80 Racks on a Friday/Sat night, which isnt too bad for a small farm town of about 1700 people.  Granted I get people from all over stopping in.
