  I'm going to get extra probes too because I have to need something and not have it, especially at a critical time liking smoking a box full of butts! lol

My next smoke is going to be 4 butts and Wicked's requested by my daughter for a little party she ask me to cook for next weekend.  Kind of nervous and wishing I had a little experience with pre cooking and reheating.  I'd hate to damper the party with a similar stall I just experienced with this brisket! haha  Figuring if nothing else I'll get things fired up at 2 or 3 a.m. Saturday just to hopefully be a little on the safe side.  Figure that'll give me plenty of time to include some cooler time before serving at 6 p.m.  I picked up a half dozen of 6 pound butts that were on sale for .90 a pound...YAY

Amish Deviled Eggs?  Haven't seen that post...did you post it?  I'll have to check that out!

I did a 5# brisket this past weekend and it was the best I ever had. This was my third attempt. The first two times I crashed and burned. This time I used my Treager wood pellet grill and smoked for a total of 6 hours. I used Hickory and mopped once per hour with a beer mop and wrapped in foil for the last hour - very tender and juicy and great smoke ring. It's even better the next day for sandwiches!
