here is a picture of the smoker that me and my brother built.  It is a 18x60 inch 65 gallon pickup propane tank did't get pics of the build do to my camera not working thought you might like the pics all it needs is sand blasted and painted

First off Welcome Mike to SMF. you'll like it here for there are alot of really good folks here that would just love to help you with just about anything to do with smoking. Now there are alot of proven recipes for some amazing things here too. So if you need sign up for the E-Course it's free and it will give you the basics of smoking and some good methods to use also. So the next big thing for you to do is go out and get you something to smoke and if you happen to have any questions just post it here and we will be happy to answer them for you.

Go out east 21st to 21st and Sugar beet there is a place called David's fire wood he usually has oak,mesquite,hickory and sometimes pecan. Are you here by choice or did you get stationed here?

yeah i really do like it here was just referring to some of the guys that can walk out back and cut down about 10 different types of smoking wood all we have around here are elm trees.  

 

on a second note i cooked a front quarter from a 60 lb hog yesterday cooked it at 250 degrees with white oak until it reached 165 then wrapped it up in foil and took it to 205 and let it rest for an hour.  the meat inside didn't firm up like i thought it would any suggestions on how to make it firm up better inside.
