Lookin' good!

I have a small suggestion though.  Put the poultry below the other meat if you can at least until it gets to 140°.

Can't wait to see the results!

Nice start, what are you using for a rub???? I like to brine wings then smoke. And like Indy said Poltry needs to go below the other meats.

thanks for the suggestion will do in future!! and crockadale as for the rub i just made my own with onion power garlic power and paprika, cayenne pepper, brown sugar, salt and black pepper. oh and i also love to brine my wings i just didn't have time today.

Everything was amazing to tell you this much a could barely move after stuffing my self lol. As for my potato salad its a ranch potato salad i use these butter new red potato man there so good. and i just cooked them till tender with some hard boil egg, chives, celery, chopped homemade ham, salt and pepper to taste and for the dressing it was ranch and some homemade mayo. my wife doesn't like mustard or else i would have add that also!!

i didn't wrap the wings as for thermometer its kind hard to get and accurate reading on wings. the way you can tell when any kind of poultry is done is when the juices run clear and no trace of blood in them. now i like to have crisp skin on my poultry so i took the pork out and cranked up the smoker to it hit 325.
