Well after a chat session with Pinneywoods last night I comited today to a 6 lb chunk of prime rib. Man that is impressive piece of meat.

Today is our 13 wedding anaversary and a woman that put up with me for that long deserves this. Plus I get to smoke it.

Started off with a rub of EVOO followed by sea salt black pepper and a half a finely chopped garlic. Slobbered her up good and into the smoker. running 225-235 but mostly 230. I am using a touch of hickory but mostly pecan. Wanted to use a fruit wood but forgot to buy some while I was out today.

Picked up these non fancy instant potatoes Jerry introduced me to while I was at his place this year. Dont laugh they are fantastic for $.49 a pack :)

I know where are the pix... I actually took some but I am too dumb to get them off the camera. LOL it is new and they are HD gotta have the wifes help.

Tossed a brisket in for good measure.. Hate to waste that heat.

First thing I was really supprised about was how fast this thing is moving up on temp. I am used to pork buts that barely move in a half hour. I put it on about 4:00 and right before walking in the house it was already bumping 95 deg. this thing will be done by 8:00 I bet.

Headded to 135 deg.
 
I did my first rib roast just over a week ago.  It was great!  I like the seasonings you are using.  I took mine to 130 -- 135 would have been better.  at least for my wife -- I like 'em a bit rare!  We will be smoking more of those.  I bet you do too!

Hope it turns out good for you.  Now work on getting those pictures off the camera!

Yeah, we want to see some pics!

I'll be doing a small one for Mom in the next few days, but she won't eat anything that's pink, so I'll be taking it up to 140 (gasp!).  We really want to see some pics here!!!
 
Best go past 140 mine was moving so fast that I missed it and by the time I got to the smoker it was 139. I would say it is a medium rare but on the medium side. I would insted of ruining the whole roast,,, Slice hers out of the middle and toss it back on the grill.

All in all mine went well. cant please everyone all the time,, But I thought it was great.

I'm really glad that your roast came out so well for you there Jeff. Heck I know puttin up with you is a hard job.

Where you using all charcoal and wood, gas, electricity, etc. Looks good though. Why everytime I get on here I wanna smoke something. I work overnite and im at work now(RN) and wanna leave and crank up the smoker. I think ive gained tons of weight since I joined this sight.

For anybody contemplating doing one of the prime ribs, stop reading and get to cooking.

Probably the easiest thing I have ever smoked.

It took me about 3 years to get the guts up to toss a 40.00 piece of meat into the smoker not knowing what i was doing. But this is so easy a first tomer could pull it off.
 
Well done! I mean...uh...med rare...good job my friend. The helpers are the best reason to smoke stuff.  They always make me feel good and much smarted than I really am.  Congrats on 13 years that is a good one to celebrate. I think the 13th Anniversary gift is....drum roll...smoked beef!

Ricky we should pool our dough and make one of thes while you are home... My briskets are getting better too. Last one I made before this one lasted about 5 minutes at the reunion.
