Picked up a 6 butts on sale last week for .98 cent a pound. This one here was just over 6 lbs.
Trimmed a lot of the fat cap off because I've found with the last few I've done they are plenty moist and have enough internal fat. Plus I think with hourly spritzing and foiling at 165*, it can't really help but be moist. Mustard on!
Rubbed and double wrapped in plastic wrapped for a rest in the fridge until morning.
As much as my head hurt this morning I went ahead and got up to get my butt smoken'!
Started spritzing just about 2 hours in. This was the 4 hour spritz.
At 5 hrs and 20 minutes in she hit 165* and pulled.
Spritzed up (3 to 1 apple juice & cider vinegar) and for some reason I thought I'd throw a little brown sugar in the mix. Double wrapped her in foil and put back in for probably another 4 hrs until she hits 205*.
Time to start prepping some ABT's!
