Sunday night while smokin a butt on the UDS I fired up the Brinkman and grill this loin roast along with some yellow squash. I soaked the squash in lemon, brown sugar and cayenne. The loin got a rub of some cajun seasoning I picked up at the local grocer.
The yellow squash woulda been better if it wasn't squash LOL! I had to give it a try tho but as in the past, I don't like it.
The loin was beautiful, cooked to 170 and still plenty of juice.
