Prep time

I normally do 2 slabs at a time, but got my big boy pants on for the fourth and am going to do 6 slabs of spare ribs.  Normally I wait till the morning I am going to smoke the ribs and demembrane them and rub them down.  After they are rubbed down I wrap them in foil and put them in the fridge for an hour or two or right on the smoker if I am running late because of the bottle flu the night before.  After all of that is there any down side to going ahead and doing it today or tomorrow when I have plenty of time and letting them sit in the fridge rubbed down in foil for 24-40 hours ahead of time?

I usually prep my ribs the night before, for the same reason. However 24-40 hours might be pushing your luck. ribs arent thick like pork butt / brisket, and the salt in the rub might draw out too much moisture.

 

You could trim / de-membrane them the night before, and rub them up the night before or day of the smoke. That might be a bit more optiomal time usage.

 

I understand the bottle (24 or 26 ounce) flu. I become quite... uh... slow the day after.

I prep and rub the night before, and it works for me. I agree that longer than 24 hours does start to draw out the moisture, at least in my experience. It's all good my friend.

Thanks guys I figured I was alittle too far out, but in the interest of spreading out the prep I wanted to get some advice.
