Abuncha burnt ends!!

Just dodged another doozy of a storm last night here in ohio, so today is picture perfect for smokin!!

At work I have been trying to put out more packer briskets since I have been here at SMF. I figured there has to be some people out there looking for them so I might as well sell'em to em! What this does is creates a small problem at work. the briskets have a 10 day shelf life after we price them and put them out in the case. We leave them in the heavy vacum packaging and just lable. After the 10 days I take them out of the vacum pack and seperate the flat from the point, trim it up a bit ,then package for the meat case.It has 3 days to sell while its in the case. after that if it hasn't sold it goes into hamburger trim if it still looks good. if not it goes into trash.  The problem is what to do with all those points that I cut off???????I said it was a problem for the store,,,,its not a problem for me!!

  I wrap them in plastic wrap and save them so I can make burnt ends!! I have made them once so far and WOW were they awesome! So thats what I'm upto on my day off.

ON TO QVIEW!!!   All coated with A-1 sauce then some of Jeffs rub on it .

Nothing to do now but put the lid on and enjoy the smoke while I work on my honey-do-list.

Perfect plan you have there....save'em up and make a big-o-batch of burnt ends!

We got hit pretty hard with the storms yesterday here.  Did you feel the quake?  Our building was shaking and groaning for about 15-20 seconds.  Freaked people out.  

Can't wait to see the finished product!!

Well meat was on by 8am and pulling at 5pm to do the chopping and saucing.

I don't what I would want more, an endless supply of brisky points or a goose that lays golden eggs.

Nice job on those ends and a good lookin drum to boot. I was eyeballing your dog kennel too. I need to do something like that for my yellow lab. He's making a mess of my back yard..
