A Holler in North Iowa
Fathers day was busy, lots a work ta do an a big smoke.  Did some shoulder bacon as part a it.

This is one a Hillbilly Vittles best sellers, the recipe is bout as close ta grandpa's as I can get.  It's really good stuff an a big hit fer breakfest to!
 
Great color on them bacons Tip,  I bet they taste evern better then they look.

That looks absolutely delicious!  Fantastic color.  Is it a standard cure & smoke of pork shoulder?  I just started making bacon (slicing my second batch tonight), and it's been great.  Not sure I can buy store bought anymore.  I'd like to give something like this a shot!

Now your should bacon looks fabulous and I also can't wait for the sliced pics too. I should do like butt bacon or should is good too but I haven't tried it with a shoulder yet....What is the recipe for your bacon I'm sure you don't make it from a kit. Like I do

Well, it ain't a standard cure, It has several ingredients in it ya won't find in a basic bacon cure, I been workin on it fer quite a spell, tryin ta make one like my grandpa's.  It is bout as close as I can get.  There be several good shoulder bacon cures out there an make a fine bacon at that.  I never liked the kits I tried, was to much salt in em fer my likin.

I'm also glad to hear I'm not alone. I find Hi Mt Cure to be way too salty.

I like my simple cure & seasoning much better. You don't know how much of what is in those pre-mixed cures.
