Tomorrow we're having a family reunion for my dad's side of the family and I volunteered to smoke some meat and my wife's making baked beans.

My boy was taking pics and is being a big helper tonight.  He even laid down for a nap so he could stay up for the all-nighter.

So here we go:

Got a little weather in, but the EZ-Up handled it well - best 200 bucks I ever spent:

It's about 11PM and the butts are at 137° and the smoker is at 247°.

I'll update throughout the night...got 2 chix to go on in the morning.

You really do have a set up there now Indy. I used to have one but after a year or so you tend to get alot of holes in it from the sun. Now I have a wooden roof so I like it better. The I can have a tv and a stereo too. I like your butts and that is your rub too. Cool.
 
The WSMs spiked a little bit due to the wind from the storm, but after some adjusting they are sitting back down to around 225-230°.

Here they are at 142° in just under 3.5 hours:

The bark is starting to form...at ~165° we should see a good bark if the temps hold steady.

On a side note, I installed the eyelets from BBQ Guru tonight and whipped out one of 2 brand new ET-73 remote therms.

Definitely recommend both.  In addition, I recommend you plan better than me and learn your therm and install you eyelets before you are even close to wanting to put your meat on...wasted a lot of time doing that tonight and got started about an hour later than I wanted to.
 
Those eyelets are a life saver.  My mistake was ordering only one instead of two or three.  I need to put in another order along with picking up an ET-73.  The butts looks great.  That WSM is such a wonderful smoker, don't cha think?  Your son is taking excellent qview.  Good job to him!!

Yeah they are...no messing around with the wire when you open the lid.  The WSM rocks!  So easy to get started and maintain temps.

This will be my first long smoke so we'll see how I did with the minion method.

He's doing awesome!  The last 2 pics weren't that great because it was storming and he didn't want to get under the EZ-UP when it was lightning.  Can't say I blame him!
 
 
Well some of you may have seen the Pitmasters episode when they were in Mesquite and Harry Soo was yelling, "We're all gonna die!!!"

I apparently was slated to do a reenactment of that tonight.

The weather got terrible around 3AM and the EZ-UP would have blown away if not for the fact that it was stuck between my truck, the garage and a basketball goal.

I had to get that down by myself, and I'll tell you it's really EZ (no pun intended).  I had that thing down in about 5 minutes by myself.

The temps were way wacked out and my butts had dropped about 5 degrees also.  I fired up the oven, foiled the butts and put them in the oven.

Things I'll do different next time:

Sandbags for the EZ-UP (was actually going in the morning to get them anyway)

Set the alarm on the ET-73 (I had the hi and lo temps on the smoker set but no alarms)  DEE DEE DEE!!!

I think I'll be good though.  I have to say that 3 years ago before learning what I did on here, I'd be toast and I'd be buying pre-packaged PP for the reunion tomorrow.

I'll post some pics when the pork is at temp.  Night folks and be safe with this crazy effen weather.
