Well my roast got delayed due to the necessity to pull an engine on a '67 Cadillac De Ville.  So I'm doing smoking her tomorrow.  I ended up with a 4-rib 8 pound roast.

So, how did it turn out?

Pretty good.  It took about 5.5 hours to get to 130 and then I pulled it.  I also did some beans, mac and cheese, and a chicken.

Well, I'm inspired.  There was a sale a few weeks ago and I picked up a 4 lb prime rib.  (But it's been trimmed- no ribs and it's kind of rectangular.  looks like the middle section of a full prime rib roast).  If it defrosts in time, I'll be smoking it for dinner.  We eat late in our house, so it still might happen.  I work the next 7 days so it'll be the oven for it if not.

Hurry... DEFROST!!!

I'll post QView if I get to smoke it...

Later,

Brian
