hey guys...I got one of those Mav dual temp probe digital thermometers...one to put in the meat, and one to show temp inside the smoker..now..my question is...how should I run the wires...should I just close them in the door when I am smoking, or should I run them up and out the smoke vent on top??

any advice??

I've got a vertical smoker, so I run them out through the top vent.  I've seen others who wrap foil around the area of the wire that will be pinched in contact between the door and smoker body.
 
What type of smoker are you using? I have a GOSM big block, and I run my cables through some small holes that are on the door.
 
oops...sorry I didn't mention my smoker.  It's a MES 30...has a rubber door seal, and a smoke vent on top.

You can run the wires thur the vent hole if you have enough wire on them. If not I drilled a 1/4" hole in the side of my smoker but mine is not an insulated walls like the mes. You should be fine with the small hole and you wouldn't lose any heat either.

Same here, but I only foil if being used on a grill
