What part of of the pig is a Boston Butt ? Is it the from the arse  end, or as you would say "ass" end, or is at a shoulder cut ?

I know "butt" suggests  hind quarters but i'm sure i read somewhere that it was shoulder

Tried the 321method  ( or the "Ted Rogers" as it's known in the uk)   on some  spare ribs they were absolutley top hole , ding dong ! 

What are great source of top gen this forum is !

It is the "top" cut from the shoulder whereas the "bottom" cut (closer to the leg and more fatty) is called the "picnic".

Strange that a butt comes from the shoulder but they do and they sure are tasty
