Now I have foiled and not foiled nd I do like mine foiled but for not the length of time the 3-2-1 calls for. I usually only foil for maybe an hour to hour and 15 minutes.
 
Kind of funny I just smoked some ribs for a fishing tournament a few weeks back and since I was on the lake fishing I didn't foil my ribs and I said I would never make my ribs again without foiling them. Just goes to show that everyones has their own way of doing and liking their smokes. As long as you are happy with the results thats all that matters.
