Woo Hoo! Bristles down boys! I know there are lots a ways to do these, but the following the method I am quite partial to, and since this is going to wrap up my weekend smoking, I thought I'd let ya all have it....

Here's the "Barrel Q" - built this sheela long before I knew the sophistication of the UDS....



Standard load from one to eight TT's - two chimneys of charcoal



Fired up along with WALLE for the ABT's



The victims
Smoked Gouda/Green Onion Cream Cheese ABT's sprinkled with Rudy's
TT seasoned up with a home-grown that I like and Canadian Steak seasoning.



ABT's... ON



Hickory... ON



Tri-Tip...ON


ABT's - 1 hour at 230*
TT - 45 minutes at 400*

And the double, double - look close and you can see the thin blue coming outta both.


 

And here's the wrap up...

Done! at the 45 minute mark.. couldn't decide which picture I liked best, so here they are.





ABT's - same thing...





Sliced - turns out EVERY time!



Plated with some fresh sourdough and the last of last year's corn..

Excellent meal, I've never seen a Tri Tip cooked in that manner. You cooked it to perfection with a great smoke ring. Dang, you did it up right my friend. Thumbs up to your post

Perfection! I like how the ABT'S lay on the rack. I gotta say Sheila is the beauty of the beast.

Thanks, MH - it's 2.5 X 1" expanded metal - works great for cooking, but as you can see, they are hard to get off!  I've seen that some of you have some pretty cool holders.  I'm going to poke around and build me one that I like.


 
Holy cow - I've got veggies roasting right now but those pics have me salivating..... nice!!

That's some fine looking tri-tip, Tracey!  I see Sam's Club has been getting a few in lately so I may have to try one.  I don't have a fancy barrel cooker like yours, so I'll just have to do mine in the Vault.

Bassman, now that grilling season is upon us, you'll find more tri-tip in the markets-you can almost plan on the price going up on them as well.

Tracey-that is some fine looking grub. As ugly as that drum is, it sure do a pretty job!!
