I have my barrel and know basically what I need to do, But, I am perplexed about mounting my thermometers. I am going to Big lots and buy their El Cheapo. I plan on using the lid and racks. I also plan on cutting off the top lip off the bottom so that the lid will fit securely. Now comes the thermometer quandary. I'm thinking of drilling 1 holes, one each below the top two grates. My thoughts is to drill a hole in a cork and pot the therm. into the middle of it and put it in the drum so that I can remove it to take out the meat and lump basket, Any thoughts?

You can buy a sleeve used by electricians that is a metal sleeve that protects the wiring in electric boxes. That should be better then a cork for it might catch fire but it might not too. I'm sure you can find it in your local big box hardware stores. Homeless, Lowe's etc.
