Do any of you guys brine your ribs before smoking? My wife picked up a couple of racks of spares so just wondering.

   Thanx

I personally don't and really haven't heard of anyone else brining their ribs. Now some folks here like to marinade them so you might want to consider that if you want to. Now I would just apply the rub to your ribs the night before and wrap them with saran wrap and into the refrig for the night. Then you can smoke them as you wanted to in the first place.

I have brined fresh cut pork butts/picnics with better results than I got without brining. If the pork is cryovac packaged, it is already in a brine solution...I just rinse well with fresh cold water before applying my dry rub, and you're good to go.

I did brine/cured spare ribs with Morton's Tender Quick once...that was a pretty cool experience...not at all what a normal rib looks or eats like.
