Nice ribs and steaks...congrats..curious about the probe though, (what looks like a metal bracket?) I would think it would transfer heat from the grate...??

im not really sure. that bracket came with the maverick smoker thermometer so i figured they were pretty accurate and wouldnt design something that didnt work.  what do others with the same thermometer do?  any other ideas for using the chamber probe to test temps?  im still pretty new at this, that was only my 4th and 5th smoke.

i only had one probe hooked up at the time.  i was doing the ribs then and figured id wait til i was done with the 3-2-1 before i took the internal temp.   thanks for the props, the ribs were really good but the steak was just meh, i think i stick with the grill for steaks in the future or else try some different wood thank hickory.
