Hello Everyone,

I just purchased a new Smoke Canyon Smoker Grill.  My first try today wasn't successful as I was unable to get the temperature up high enough.  This smoker has a side box that I used with charcoal and mesquite.  I did not use any water.  I'm finding out that this is going to be trial and error, but mostly error.  I had the vent open on the box so that air could get in and the vent closed on the actual smoking aparatus.  Sorry, but I'm not smoker savvy yet.

Does anyone have any suggestions for me to get going here?  I did keep stoking the fire and left the meat untouched so as not to disturb any heat.  There was lots of smoke but no heat.

Any suggestions are greatly appreciated.

Welcome to SMF. I'm not familiar with that particular smoker. The top vent should be left open or you risk creating creosote. Is there a grate in the firebox for the coal to sit on and allow air to get under it? Lump charcoal burns hotter. You are not looking for heavy smoke you want Thin Blue Smoke

Thank you.  That's a good point concerning the air being allowed to circulate under the grate of charcoal.  I don't think the grate is high enough because there is maybe 2 inches under the grate.  I'll look into a higher grate for more air to get through.  I'll also re-think what charcoal I use.  Do you have a recommendation?

Thanks for your advise.

Royal Oak Lump Charcoal is a great one to use, but if not just look around and see what lump charcoal you can find in your area.
