Smoking a Pork Butt

I am a newby to this site and to smoking -- and I love both!!

I have a question. I am planning a Memorial day picnic with smoked pulled pork and smoked spare ribs. Can I cook the pork butt the day before and reheat it on picnic day? Also, when you say to put it in a cooler, should the cooler have anything in it or should it be empty. I am becoming VERY NERVOUS as we move closer and closer to cooking day!!

Welcome to SMF. Yes you can smoke and pull the pork butt the day before. I would suggest placing the pulled pork in a disposable aluminum roasting pan and cover tightly with foil then just stick it in the fridge. When you get ready to reheat it add either a finishing sauce or a little apple juice and mix it in, then put the foil back on and reheat.
When we talk about resting in a cooler that means a cooler with nothing in it. Many of us wrap the foiled product in an old towel then into the cooler. Others will put a bowl of hot water in to warm the cooler before placing the meat in others don't
Don't forget to stop by the Roll Call section and make a thread there

Actually you will find the pork butt better a day later. Alot of times I vacuum seal some of the pulled pork then toss the bag in some boiling water to reheat. Both my wife and I feel it is better than the first day.

Joy,

I am a newbie to the site as well, but have been smoking for quite some time (although, I am still a novice compared to many of our esteemed members) I agree that pulled pork is better the day after than the day it was made! If, however, you plan on serving later the same day (though not too much later) packing the meat in a cooler, wrapped in foil, towels, and packed with old pillows, this will keep the meat warm (safely) tender, and juicy. You may even find that this tenderizes the meat even more!

Agree completely, I never cook just one butt even if it's just for the wife and me. Vacuum seal a meal for two, (2/3lb I eat a lot more then she) and if we invite friends over they think I smoked it that day, just take out however many packs you need.
