What do you do with the skin?

Smoking my first batch of bacon right now. I'll be trimming the pork belly skin off after it smokes. I'm curious -- what do you do with your skin?

You could render it down for lard
You could make cracklins

Avoiding temptation! Maybe not a bad idea. As I put those bellies in to smoke I started thinking about the skin....cracklins maybe as Pineywoods wrote.

I save them in the freezer and add them to a pot of beans as needed.  Yummmmmmm.   Our last local bellies were without the skin - and the bacon just didn't have the same quality as the bacon done with the rinds on.
