I just had to announce again just how much I love this WSM I picked up last week. Did a quick smoke last Sunday -- two turkey breasts and a chuckie (Qview at the link below).

Last night I fired up the WSM for the second time. Used a clay saucer in the water bowl -- seems to run a bit hotter, so I could close down the vents more, save fuel...longgggg smoke! Held temps like a champ.

So last night it held two pork butts and a brisket. Those are resting now, and I have two more turkey breasts in the WSM. Stirred the coals, added another chunk of hickory, and about 15 pieces of K blue. Open vents a wee bit....running nice and steady now at 265. What an awesome smoker!

New qview to come later today.

Oh yea -- I'm also smoking my first batch of bacon in a friends MES. I got it baddddd......

So true Rick! I had always heard that. Until using it (twice so far), I had no real idea just how steady it cooks. It's a smoking beast!
 
Yeah.... makes you wish you had got one from the get go.... lol. I really enjoyed learning on my Char-Griller offset, but once I got my WSM it was like somebody turned on the lights in a dark room. Glad our loving it JAK
