It's 8am here in Sleepytown Mo and in a few minutes it is gonna be smellin good! Wifes birthday is today so I am cooking a pork butt for her, it is an 8lb chunk and I kept it simple. The rub is salt, lots of pepper, garlic powder and a good dose of cayanne powder. The main wood I use is hickory but I have a bag of apple chips I'm gonna add to this for kicks and giggles.
I'll do my best to get some pics of everything. I'm using a Brinkman offset and trying a modified Minion set up with the wood and coals.

well you too have a great plan going and I will stop backin as well and see how things are going. Please don't forget the Qview.
 
Qview already in progress, got pics of the fire set up and the butt in the smoker. gonna have to work on that thin blue smoke thing tho..I got enuff smoke rollin the fiiredept might show up!!




Then I added the apple chips...it'll be ok but I almost smothered the fire!




Bout time to use the weed wacker around the smoker

LugNutz -- At the risk of sounding rude or impolite, I'm going to suggest you cover/tent (not wrap) your meat with foil until that wood is reduced to mostly coals, and your cooker is producing TBS... not the voluminous cloud of white smoke that it is now producing. The white smoke is full of "dirt" (ash, soot, tars, carbons, etc) that will lay on the surface of your meat making it taste bitter...HTH!!!!

Corn Cob thanks for the advice I'll remember that next time! Smoker has leveled off to 240 and just whispy smoke coming out. Next time I'll let it cook down a bit before puttin the meat on.

This post kinda makes me sad, I can never talk bout my wifes butt on her b-day since her choice would be the beer chicken.

7 hours in and I'm holding at about 220 on the smoker and 175 on the meat. Today has been a good day, used my spare time to find out what I can do different the next time as far as getting a tbs and checked out a ton of other posts on here. I'll be back later with more pics of my wifes butt!
 
I agree with COB... and there seems to be a lot of fuel in that small firebox;
I use as smal a fire as I can to do the job,the fresh fuel should begin to burn(flame) as soon as it hits the pile,and chips in a stickburner,I question that too, especially wet ones.Too much white smoke.As a lot on here say"If you can smell it,it's smoking".Real light and Blue is a learning curve. Oh,and forget set and forget thingy;what is the reason for cooking outside? To comune with Nature and Friends and Family,right?
So, get out there and tend that fire and drink a few more Brewskys(if you do) and RELAX

Had multiple squirrel sightings today ( season opens today I should get the gun ) and then late this afternoon I saw our 2 deer out in the yard!!! I guess they figured it didn't smell like venison so they were safe!
 
What a day!! Wife's bday butt is nice and tender and juicy. Next time I'll pull it out at 200 or so instead of 195, it just seems like it needed a tad more time as some of it didn't pull as easily as I thought it should. I'll get qview up in the morning, I'm eating a rather late dinner then calling it quits!
 
Just make sure whatever you do you don't tell her, her butt was to big!... heh-heh

All in all it turned out to be the best I've done so far, and thanks to you all I learned a lot about what I can do to make it better.

and the pile or pulled! I need to try a finishin sauce, and I have to get over my bad habit of not writing things down when I make em, my sauce I made was ok but I got a bit carried away with the cayanne

I noticed a "bone" in the pile

, that means favor and is the most reliable indicator of doneness of a good "BUTT".So, remember-"Leave it in till the bone pulls out"
