I had some Pulled Pork thawed out for a reheat and Rib Steaks to smoke & sear in my charcoal kettle for dinner...hmm...me being an energy conservative, I came up with this plan...
A inverted beer-can chicken rack over the smoke can to elevate the foiled PP over the heat source of the smoke can to catch some higher heat, while still allowing near normal flow of smoke and heat for the steaks on the side to cold smoke for an hour until I seared them up:
After I started searing the steaks, I rotated the PP on/off the hot coals to finish bringing it up to safe temps. It worked like a charm!
