OK, this is just in the planning stages right now, but I want to build a large propane smoker out of a 275 gallon oil tank. The oblong shape should allow me to keep with the vertical concept as with my Brinkman, therefore the internal concept/design should be similar right? What I mean is: burner, wood pan, water pan then grates. Any thoughts or ideas are very welcome guys & please tell me if I'm way off here.

Notes: I like the convenience of the propane models so I tend to shy away from wood only. I like the size of the oil tank, which should allow for more cooking space.

So: can it be done?
 
Sounds like a great project and I don't see why it wouldn't work with the right setup and burner. Don't forget to post lots of pics of the build.
 
I am thinking  and planning  about the same thing. Planning on three shelves and the capabilty of smoking half a hog. It will be a trailer mounted smoker.  
 
Nice! I got a small (4'x4') trailer that needs a little TLC and I have some connections for the tank. If I can get the tank soon, I thinking this will be a great winter project. Keep us posted on yours Eagle!
