Pastrami and Beef Plates

I've always used a packer when making pastrami but Rytek also mentions using Beef Plates. What are beef plates and how do they compare to brisket.

Well, I don't know what a beef plate is, and I'm not really sure what Scarlet Begonias are, either. smile.gif

I see that they are skirt steaks but how big is full size beef plate and are they any good?
