name's Scott. loved cookin since i was a sprout and have been using a brinkman elect. torpedo for 3 years. had a charcoal model b4 that for 2 yrs. just junked my brinkman gas cooker which i did alot of indirect cooking on with good results on tri-tip chicken and such. Just bought the chargriller duo w/side firebox and have been using the heck out of it. not burning too much propane because i love the real fire side. done the 3-2-1 method on babybacks with great results and the 6-7 hr. method with charcoal/wood in the chargriller and have been well pleased. bought Jeff's sauce and rub recipes and love them. have got alot to learn about fire building and temp control. i completely ruined a big pork shoulder (tasted absolutely terrible) couple years ago in the elec. torpedo. researched it and came to the conclusion it was creosote. this is a great source of info and everyone seems hospitable. pleased to meetcha!

First off welcome Scott to SMF. You'll like it here cause there are abunch of good folks here that would just love to help you out with just about anything to do with smoking. We really like to have newbies here because they can bring in a new propective to how things are done. There's nothing like a new set of eyes to give and new way to make things that little differant to make things alittle better. So I hope you know about the Qview here.

It's also free and it will give you the basics of smoking. So after all of that you just need to go grab something to smoke and if you have any question just post them here and we will answer it quickly so you don't have any mishaps with your smoke.
