Briskets are like snowflakes...There ain't no two alike!!

I found this one while walking around in Sammy's Clubhouse.
I tried to walk off, but it kept calling my name...So here it is....

If ya wanna know ~~

Sugarless Rub...
No foiling.....
Cook temp 235*- 240*...
Flavoring woods...Mostly Oak, a little hickory.
After 3 hours...Mopped every hour or so....
Cook time..16 hours to 190*
Fat Cap down all the way....
Tender as Grandma's love.....

That really looks awesome - love the color! Great job. I love it when the meat makes ya buy it - usually turns out better than a "planned" purchase.

That's a nice looking brisket. I usually have two or three packers calling me when I go through Sam's Club.biggrin.gif

When these things reach a plateau and stall out, it's always a good idea to just sit back, relax, stay calm, and drink a little bourbon!

What is that on the fence - a parking meter or game cam?

Awesome smoke ring on that bad boy! Best looking brisky I've seen in a long time.

Was just in Sammy's Clubhouse yesterday and a packer called me back to the case twice... Had to tell myself - "FOCUS, SELF - FOCUS"! biggrin.gif

Great looking brisket! I'm not sure it's even fair to call that a smoke ring, smoke collar sounds much more appropriate! That is some serious penetration!!

GOBBLE GOBBLE love the Wild Turkey... but really loved that smoke ring... i havent done a Brisket Fat Cap down... perhaps i will consider it for my next one...points.gif

A big thank you to everyone! Sometimes the stars all line up, and the results are pure,savory, succulent BBQ perfection ~~ Next time?? Who knows ~~ Like I said...briskets are like two alike..... and everyone of them is an adventure!
