Thanks to the help of a few people here, My smoked corned beef tip that I thought I had ruined found new life with a few minor suggestions. I had already cut the tip in half after the smoke (with the grain) DUH! I do know better. I steemed it, let it cool and sliced it the rest of the way (this time against the grain) A few mistakes but I have a few more cuts in the freezer to try agin. I had my first sammitch last night and it was better than any pastrami I have ever bought from the grocery store. Sorry no pics. The wife thinks I'm crazy enough for taking pictures of the smoke on Sunday. Any way, sorry for the babling. Thanks again to everyone who chimmed in on my first smoke post and saved my meat.

Get used to the family looking at you like you are some sort of loon as you snap pictures of your food.... lol. Wife still pokes fun at me.... as she loads her plate up for the 2nd time.... heh-heh.
