Smoked a littel stealhead, and Chicken today!

I tested out my new craigslist find with a littel stealhead and chicken for my wife's b-day! The salmon was brined with brown sugar, kosher salt and lemon zest and juice. The chicken was brined in water sugar kosher salt and a littel fresh lavender tossed in. The chicken was smoked at 275 over heckory, then finnished in the oven. The salmon was smoken at around 200 over sugar maple and apple.
 
All looks real good from here !!!

Well it passed the Amanda test, (my seven year old), for me, that is all that is needed.

Man, do I love smoking meat, or anything....
 
Now thats some good looking grub there. The only way it could get better would be if I were there sitting at your dining room table with a fork.

Thank you all for the kind words. Yeah everythig came out real well. We had five adults and three kiddys. Everyone was real happy, after smoking 25 chicken legs, about a dozen or so thighs, and a few breast, along with four sides of stealhead. All that is left is four pices of chicken, and two pices of stealhead. Time to get back to the smoker.... lol

Yeah, in the end it came out okay.... And is already gone.. Hours of smoking, minutes of eating.... !
