Alright...I was rightfully chastized for asking a few questions, and not posting any Qview from the last two smokes. They both ended late, and stopping to pull out the camera wasn't going to happen with me and the wifey hungry after work.

But, one thing I smoked while I was making boneless breasts for dinner earlier this week were some drumsticks and thighs. I figured might as well fill up the smoker, and freeze some for later.

I kept a few unfrozen drumsticks and thighs in the fridge for this week. While I'm smoking babybacks today, I got hungry. Why not slice up a thigh and make a sandwich?

Bread, smoked chicken, and avocado. The sandwich needed no other flavor whatsoever!

It's not often I finish the entire sandwich and only have a few sips of beer. I completely forgot I opened a Goose Island Matilda until after the sandwich was gone!

So...babybacks are 1 hour 15 minutes into cooking...I can't wait!
 
Now I like the smoked chicken breast but you lost me with the avocados. Now that beer looks good I think is it dark being aussie isn't it???
 
Looks tasty! Why didn't you enter it in this month's throwdown??

I also like to put extra meat in the smoker for weekday dinners. Great choice of brew too!
 
Hah...it's actually a thigh, cut up, and re-heated a bit in the toaster oven. I love avocado...it's a great flavor, not too overpowering. The beer is actually brewed at a local Chicago brewery. Yep...it's a bit dark, and packs quite a punch!

I'm a noob and didn't know about the throwdowns. I need to go check that out.


Hmmm...the cold breeze must have died down...smoker temps are creeping up to 250F....gotta go check things out!
