Saturday Meatloaf

The weather was pretty stormy yesterday but I managed a quick smoke in between storms.

The recipe was nothing special; just your basic meatloaf recipe. Ground beef, chopped green peppers and onions, chopped garlic, a couple eggs and bread crumbs. I smoked it with mesquite chips and it turned out great. The weather kind of caught me mid smoke and I ended up finishing it in the oven but two hours of TBS gave it plenty of flavor.

Being rushed, I didn't get any before or during smoke pictures but here's how it turned out:

I'm glad you didn't get caught in the weather for it proved to be pretty bad storm alright. But your meatloaf looks awesome.PDT_Armataz_01_34.gif

That was my first smoked meatloaf and after having it that way, I doubt I will ever cook one in the oven again.

I agree once you have it in the smoker you can never go back to the oven.
