I was born in Louisiana and grew up in Dallas (Lewisville) TX so I have soft spot in my heart for Cajun food and BBQ. I moved to Mooresville NC 3 years ago and luckily I can cook or I would be severly deprived of my 2 favorite food groups. There is no cajun food here and I have not really adapted to Carolina BBQ. I have been smoking for several years on a small Brinkmann model but I have more to learn than share. I also have a large La Caja China roasting box that I would be curious if anyone else out there owns. It's really made for pigs but I end up using it mostly for chickens. I am also planning to build a reverse flow smoker out of a 250 gallon tank. I will be asking for advise when that project starts.

Welcome to SMF glad you decided to join us. You'll find lots of good info here and some great recipes as well. You will also find a section on building reverse flows

First off welcome Crawfish to SMF. You'll like it here cause there are abunch of good folks here that would just love to help you out with just about anything to do with smoking. We really like to have newbies here because they can bring in a new propective to how things are done. There's nothing like a new set of eyes to give and new way to make things that little differant to make things alittle better. So I hope you know about the Qview here.

It's also free and it will give you the basics of smoking. So after all of that you just need to go grab something to smoke and if you have any question just post them here and we will answer it quickly so you don't have any mishaps with your smoke.

Welcome from Austin, Tx. You're gonna love this forum. Don't want to rub it in, but the family and I had a big crawfish boil last Sunday. Nothing in the smoker, but the mudbugs were delish.
 
Your not going to believe this but I brought back 70 lbs of crawfish from Mobile AL last Friday. I travel a lot so I brought back 2 coolers as checked baggage. The people at US Air were not very happy about it so I don't know if I can pull it off again.

I am extremely jealous that you are closer to the Salt Lick than me.
 
Welcome to SMF...Just smoked a Fattie stuffed with Boudain as my wife is part cajun...Momma has to send us the boudain from Beaumont so it is like gold around here. Can't get it in WV. Enjoy the site.
 
Hey Crawfishslayer, I live in Mooresville too. Have you bought anything at Mooresville Meat Center? I bought a brisket that was about 11 lbs that was pretty good and I've gotten some babybacks there too. Their prices are a little higher than WM (which is where I've gotten most of my others) but the quality seems pretty good so far.
